The Advertiser had a sneak peek inside the historic Marlow pub set to reopen next week following its multi-million-pound refurbishment.
The George & Dragon pub, located along the Causeway, closed its doors for nearly 12 months for a major renovation after ceasing operation in August 2024.
Hospitality group Heartwood Collection acquired it from Premier Inn owner Whitbread PLC, and now the Grade II-listed building is due to reopen with a new look on Tuesday, July 15.
Heartwood Collection CEO Richard Ferrier is ‘delighted’ to be opening their 32nd inn and seventh pub with rooms in 16 months, having had their ‘eye on Marlow for quite some time’.
He praised the ‘beautiful and vibrant town’ for being a ‘well-known foodie destination’.
“It is an iconic pub in a beautiful town that we have been tracking for several years,” he added.
“To finally see it brought to life is a proud moment for the whole Heartwood team.”
The entire space, offering 200 internal and 50 external covers, has been reconfigured so the first thing guests see is the bar.
A range of cosy nooks is complemented by two new log burners, tapestry-style wall coverings, armchairs and private dining snugs.
The company was keen to restore the character of the historic building and showcase its heritage whilst adding contemporary touches.
Design director Inge Watrobski ensured there are nods to the local area in the artwork selected, including a sketch of Bisham Abbey or a portrait of Mary Shelley, who spent time living in Marlow.
Previously a storage area, the courtyard is now for al fresco dining and drinking, and features a tiled and heated dog shower for muddy paws.
The conservatory to the rear has been renovated to create a garden room overlooking a landscaped garden.
Upstairs, the 17 bedrooms boast free-standing baths, as well as rainfall showers, Bramley toiletries and Silentnight beds.
Families are also catered for with travel cots or trundle beds as well as a dedicated children's menu.
The pub will be serving a seasonally changing menu created in line with its three-star rating from the Sustainable Restaurant Association.
The summer menu opens with dishes such as beetroot terrine with horseradish sorbet, pan-fried cod fillet with ratatouille and a signature pistachio soufflé with chocolate ice cream.
A curated and extensive drinks list features wines, cocktails and draft beers, including Rebellion.
Heartwood Inns is dog-friendly and welcomes well-behaved canine companions in the bar and courtyard (with a strict paws on the floor policy).
With a dedicated menu from Sir Woofchester, including a roast and a 'Paw Star Martini', four-legged friends can also stay in a number of the pub’s dog-friendly rooms with their own bed, dog toiletries and dog bowls.
General manager Ben Donald grew up near Marlow, and having previously managed The Rising Sun in Reading, was keen to establish The George & Dragon as a pub for the local community.
He said: “Myself and head chef, Deb, are really excited about the opening of The George & Dragon.
“It has been a fantastic experience to be part of the opening of the pub and to see the team come together over the past few weeks in readiness for the opening.
“I am really keen to establish The George & Dragon at the heart of the community and working with other local businesses to showcase Marlow and all it has to offer.”
